
Carrot Cake
This scrumptious, cake is dead easy to make because all you need is a measuring
jug and a cake tin.
400ml grated carrots
300ml sugar, of which half can be brown sugar
200ml sunflower oil
50-100g chopped walnuts (I leave those out)
3 eggs
350ml plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
pinch of salt
1 tsp cinnamon
For the Icing...
50g butter
100g Philadelphia cream cheese
200ml icing sugar
1 tsp vanilla sugar (optional)
lemon juice and lemon peel
Grease and breadcrumb a cake tin. Beat oil and sugar together and add the eggs
one at a time. Add the carrots and stir. Mix flour with the baking powder, bica
rbonate, salt and cinnamon. Fold the flour and walnuts into the cake mixture and
pour it in the cake tin. Bake the cake at 200°C for 35-40 minutes.
Stir the ingredients for the icing and spread on the cake.
